Quick Easy Sweet Moist Cornbread | Better than Jiffy Box | 8x8 Pan | Baking UPDATED Recipe

Hey everybody, welcome back to my channel! This time, we are taking an updated spin on my cornbread recipe. If you've watched the first recipe I made, let me know if you tried it. That was more of an old-school type of cornbread. This one is going to be what I've been eating and craving more recently. It's definitely sweeter, more moist, and has more of that cake-like texture that we're used to. This goes great in the morning with tea, as a side with your meat, like chicken, or with mac and cheese.

I'm going to show you what you need to do differently and also, if you try this one, let me know how you like it. This is definitely better than the Jiffy box mix, and right now I prefer it over the first recipe I did. If you tried both recipes, let me know which one you prefer.

Ingredients:

  • 1 cup of flour

  • 1 cup of cornmeal (rounded)

  • 1 cup of sugar

  • 1 cup + 1/4 cup of milk

  • 1/2 cup of vegetable oil

  • 2 eggs (or 1/2 cup of pre-shelled eggs)

  • 1 teaspoon of baking soda

Supplies:

  • 8x8 pan

  • Mixing bowl

  • Measuring cups (1 cup, 1/2 cup)

  • Measuring spoon (1 teaspoon)

  • Cooking spray

Instructions:

  1. Preheat your oven to 350°F (175°C).

    • Ensure it's preheating while you prepare your batter.

  2. Mix Dry Ingredients:

    • In your mixing bowl, add 1 cup of flour.

    • Add a rounded cup of cornmeal.

    • Add 1 cup of sugar.

  3. Add Wet Ingredients:

    • Pour in 1 cup + 1/4 cup of milk.

    • Add 1/2 cup of vegetable oil.

    • Add 2 eggs (or 1/2 cup of pre-shelled eggs).

  4. Add Baking Soda:

    • Finally, add 1 teaspoon of baking soda. Make sure it is exactly 1 teaspoon to avoid a soapy taste.

  5. Mix the Batter:

    • Stir everything together until well combined. Ensure the baking soda is evenly distributed to prevent any clumps.

  6. Prepare the Pan:

    • Spray your 8x8 pan with cooking spray to prevent sticking.

  7. Pour Batter into Pan:

    • Pour the mixed batter into the prepared pan. Use a fork to scrape out the bowl to avoid wasting any batter.

  8. Bake:

    • Place the pan in the preheated oven and bake for 40 to 45 minutes. The top should be a golden brown color.

  9. Check Doneness:

    • Use a toothpick to check if the cornbread is done. Insert the toothpick in the center; if it comes out clean, the cornbread is ready.

  10. Cool and Serve:

    • Let the cornbread cool slightly before cutting and serving.
