Quick and Easy Coffee Cake | 8x8 Pan Dessert | Baking Recipe

Welcome back to my channel! Today, I'm sharing a super quick and easy coffee cake recipe that I absolutely love. This coffee cake is perfect for an 8x8 pan and uses ingredients you probably already have in your kitchen. The only uncommon ingredient you might need is nutmeg. Let’s get started!

Ingredients

  • 2 1/2 cups of flour

  • 1 cup of brown sugar

  • 1/2 cup of white sugar

  • 3/4 cup of vegetable oil

  • 1 large egg (or 1/4 cup of liquid egg substitute)

  • 1 cup of whole milk

  • 1 teaspoon of salt

  • 1 teaspoon of nutmeg

  • 1 teaspoon of cinnamon

  • 1 teaspoon of baking soda

  • Cooking spray (butter flavored, if available)

Tools

  • 2-quart mixing bowl

  • Cereal bowl

  • Measuring cups and spoons

  • Fork or whisk

  • 8x8 baking pan

Instructions

  1. Preheat Oven:

    • Preheat your oven to 350°F (175°C).

  2. Prepare Dry Ingredients:

    • In the 2-quart mixing bowl, combine 2 1/2 cups of flour, 1 cup of brown sugar, 1/2 cup of white sugar, 1 teaspoon of salt, and 1 teaspoon of nutmeg. Mix well, breaking up any clumps of brown sugar with a fork.

  3. Add Wet Ingredients:

    • Add 3/4 cup of vegetable oil to the dry mixture. Mix until the mixture is crumbly and resembles wet sand.

  4. Make the Streusel Topping:

    • In a separate cereal bowl, take 1/2 cup of the crumb mixture and add 1 teaspoon of cinnamon. Mix well and set aside.

  5. Prepare the Batter:

    • To the main crumb mixture, add 1 large egg (or 1/4 cup of liquid egg substitute) and 1 cup of whole milk. Mix until just combined. Finally, add 1 teaspoon of baking soda and mix thoroughly.

  6. Prepare the Pan:

    • Spray the 8x8 pan with cooking spray.

  7. Assemble the Cake:

    • Pour the batter into the prepared 8x8 pan and spread it evenly. Sprinkle the streusel topping evenly over the batter.

  8. Bake:

    • Bake in the preheated oven for 30 minutes. Check for doneness by inserting a toothpick into the center of the cake; it should come out clean.

  9. Cool and Serve:

    • Allow the cake to cool in the pan. Once cooled, cut into squares and enjoy!
